My Latest Snack Obsession
It’s St. Patrick’s Day week and we’re celebrating everything green! Today, I’m sharing one of my favorite (healthy) snacks.
You guys know I’m a HUGE fan of kale (my favorite kale smoothie recipe is here), so it shouldn’t be a big surprise that my current snack obsession is kale chips. But, not just any kale chips. These are sprinkled in spicy Old Bay seasoning – a staple in the coastal south.
Here are the 3 ingredients you’ll need:
- Kale, chopped into 2-3-inch pieces (I buy kale already chopped in a giant bag)
- Old Bay seasoning
- Good olive oil
I’m serious. That’s it. Now, here’s how to assemble it all…
Preheat your oven to 350 degrees F.
On a baking sheet, spread out the chopped kale. It’s important to spread it out. They can overlap a bit, but if you pile them on top of one another, they will steam instead of crisping up.
Drizzle olive oil across the kale and sprinkle generously with Old Bay seasoning.
Bake them in the oven for 20-30 minutes. Check them occasionally after 20 minutes to see if they’re crispy.
Plate and enjoy!
