If only this was our current situation. I don’t know about you guys, but we have really been leaning into cooking these days. We love learning new techniques and recipes – and with no evening plans out for the foreseeable future, this is the perfect time to hone those new skills.
Not feeling up to the task of a full meal? Try out your hand on a fabulous appetizer for happy hour before takeout. I have been loving Ina Garten’s recipes for hors d’oeuvres to toast with. I’ll share my top pick (and attempt at it) in the next week or so.
I’m also on a major lettuce ware and vegetable ware kick. Below are a few of my favorite picks.
One of our favorite appetizer recipes is this simple three-ingredient one. We created it a summer or two ago and it’s been a mainstay on our picnic tables, polo tailgates, and dinner parties ever since.
Here are the three ingredients you’ll need:
- dates (we prefer Medjool dates for these)
- goat cheese (we’ve used plain and honey infused – plain is the best if you’re adding honey separately)
- honey (we used creamed honey for these only because I was lazy and it was much easier than wrenching the top off of our honey in a mason jar from North Carolina)
That’s it, guys.
Now, to assemble…
Remove the pits from each of the dates. I’ve found it’s easiest to use a sharp paring knife for this. Run it from one end to the other. Then, take both ends in your index finger and thumb and pinch. It should purse out a bit, revealing the pit.
Discard the pit and any hard part on either of the ends.
Stuff the date with goat cheese and set aside. Because I’m a hair Type-A, I use a damp paper towel to wipe any excess goat cheese off the top of the date.
Finally, drizzle a bit of honey over the top of the goat cheese.
Serve it up and enjoy! The creaminess of the goat cheese balances out the sweetness of the honey and the date. It’s a delicious, one-bite app!
