My father-in-law’s birthday was coming up and, the golf lover he is, he and the guys decided to celebrate with a golf tournament with his close friends. Since their tee time was in the morning, we decided boxed lunches would be the perfect celebratory meal for everyone.
The ladies set to work pulling together items for boxed lunches to keep the golfers sustained – including a few of my father-in-law’s favorites, of course. My hubby had tees and can coolers made, which were an instant hit!
We purchased a few bags of deli bread, meats, cheeses, lettuce, chips, granola bars, and apples to include in the boxes. To tie in our yellow and green theme, we picked up green and yellow napkins at a local party store for each box. We found the boxes at Michael’s. It took a little trial and error since we needed boxes that were big enough to hold everything we wanted. There were several small boxes and many with clear windows. We finally settled on boxes similar to the ones here.
There are a few ways you can secure the sandwiches. You can fold each one in wax, parchment, or butcher’s paper and secure it with twine, as I’ve done below. Or, you can wrap them in pre-cut aluminum foil wrappers. We went with the latter since it was raining pretty heavily and we had a feeling the golfers would appreciate getting to their sandwiches quickly after playing a few holes. If you’re stacking sandwiches or making them for an outdoor picnic party, the wax or parchment paper packages are perfect.
We formed an assembly line and started boxing, finishing off each box with a printed sticker.
We headed up to the course to deliver the boxes to a round of applause. They were so loved by the guys – and several asked where we had ordered them!
